Vegetable Soup Mash

This is a good recipe for the entire family. Not only is it low in calories but it has lots of healthy vegetables in it.

If I don't have a lot of time I use frozen vegetables otherwise I use fresh and cut and chop everything.

1 package frozen baby carrots

1 package frozen peas

1 package frozen green beans

2 packages frozen zucchini

1 entire bulb of elephant garlic cut into slices

1/2 small onion finely chopped

10 cans vegetable broth

4 cans Italian cut tomatoes

1 cup small alphabet pasta (opt.)

You could also add chopped cabbage or turnip greens.

1/4 tsp basil

Sauté the garlic and onions in some olive oil and add the basil. When it is tender add the vegetable broth and the canned tomatoes. Add all the frozen items next. Cook until everything is very tender. Add the alphabet pasta and cook another 20-30 minutes on a medium fire.

Take out around 2 cups of the soup and put into a blender and puree.

Serve warm. For you and your family you could sprinkle with fresh parmesan cheese or add croutons.

Zucchini and Carrot Potato Pancakes

2 zucchinis

2 carrots

2 medium potatoes

3 eggs

Wash all the above items thoroughly. In a food processor finely process all except the eggs. Once processed, beat the eggs adding them one at a time. If you are making any for you, add some salt. Do not add any for your birds.

Drop by 1/4 cupfuls into the hot oil. When golden brown, flip over and brown the other side. Place on paper towels to sop up any excess oil. Serve warm.

You could also make this in muffin tins.
